Irish chef Robin Gill won the hearts and minds of critics and customers alike with the opening of Darby’s, an NYC-inspired, multi-faceted restaurant, oyster bar, bakery and grill behind the Embassy Gardens development in Nine Elms. The restaurant is sadly closed this month, but Gill and his team have put together a classic New Year’s Eve box with dishes running the gamut from chicken liver mousse, smoked eel and deep-fried truffle mac and cheese to beef steak on the bone with crispy beef fat potatoes and cannelloni lasagne with squash and cavolo nero, and as well as Darby’s sourdough bread, charcuterie and pickles.
