The guest chef of Four Points by Sheraton Dhaka, Anto Dwimanto has prepared some recipes that will make your Eid even more special. These recipes are a must try on the occasion of EID, which are easy to make a treat to your tastebuds.

1. Rendang daging ( Idonesian beef stew with rendang sauce )

Ingredient:

  • Beef                                                          2 kg
  • Garlic                                                       250 gr
  • Shallot/Red onion                                150 gr
  • Candlenut                                               150 gr
  • Coriander                                               75 gr
  • Coconut milk                                        600 ml
  • Blend red chilli                                     350 gr
  • Fresh turmeric                                   50 gr
  • Galanga                                                100 gr
  • Lemongrass                                           3 stick
  • Tamarind stock                                     30 ml
  • Ginger                                                     50 gr
  • Oil                                                             100 ml
  • Salt                                                           25 gr
  • Pepper                                                   10 gr
  • Seasoning                                               25 gr

Cooking method:

  • Blend garlic, shallot/red onion, candlenut, coriander, fresh turmeric, and red chilli. And then sauteed with galanga, lemongrass, ginger, until cooked and smell come out than put some water and beef with rectangle size cut and also coconut milk than cooked simmer until beef soft.
  • Put salt, pepper, seasoning than cooked until rendang sauce became thick and red brown colour.

** Time to cooked 2 hours

** Served for 15 portion

2. Bebek cabeijo (Fried duck with green chilli sambal/sauce)

Ingredient:

  • Whole duck                                     4 whole cut 10 pcs @whole
  • Garlic                                                 200 gr
  • Shallot/red onion                           150 gr
  • Coriander powder                         75 gr
  • Ginger                                               40 gr
  • Galanga                                             80 gr
  • Lemongrass                                     3 stick
  • Lime leaves                                      7 pcs
  • Fresh turmeric                                50 gr
  • Cumin                                                5 gr
  • Cardamom                                       5 gr
  • Coconut milk                                   250 ml
  • Blend green chilli                            400 gr
  • Oil                                                       300 ml
  • Salt                                                     50 gr
  • Pepper                                              20 gr
  • Seasoning                                         50 gr

Cooking method:

  • Blend garlic, shallot/red onion, turmeric than sauteed together with galanga, lemongrass, limeleave, ginger, coriander, cumin, cardomom until cooked and smell come out.
  • Boiled duck with all ingredient without green chilli, until duck meat become soft (it will be take 1 and half hours).

How to make green chilli sambal:

  • Blend green chilli but don’t blend to smooth.
  • Sauteed blend green chilli with galanga, lemongrass, lime leaves and put salt, pepper, sesoning.
  • Fried duck until crispy than mixed eith green chilli sambal.

** Served for 15 portion

3. Iga bakar ( Grill Ribs with Indonesian BBQ sauce )

Ingredient:

  • Ribs                                                    6 kg
  • Garlic                                                             250 kg
  • Shallot/red onion                           100 gr
  • Coriander                                         50 gr
  • Ginger                                               70 gr
  • Galanga                                             70 gr
  • Lemongrass                                     4 stick
  • Bay leaves                                        3 pcs
  • Cumin                                                7 gr
  • Cardomom                                       5 gr
  • Clove                                                  5 gr
  • Cinnamon                                         7 gr
  • Nutmeg                                             5 gr
  • Sweet soy sauce                             300 ml
  • Oil                                                       100 ml
  • Salt                                                     70 gr
  • Pepper                                              20 gr
  • Seasoning                                         70 gr

Cooking method:

  • Sauteed all ingredient without sweet soy sauce.
  • Than boiled ribs with all ingredient until ribs become soft (it will be take 3 and half hours)
  • And then grill ribs with Indonesia BBQ sauce.

How to make Indonesia BBQ sauce:

  • Blend garlic, shallot/red onion, turmeric, and sautéed with galanga, lime leave, until cooked than put sweet soy sauce and mixed.

** Time to cooked 4 hours

** Served for 12 portion
